Hiring Migrant Workers

I believe that this is the year I take the plunge and hire some Hispanic employees.

What pieces of documentation do I need to get from them, and what forms must they fill out, in order for me to be able to hire them?

Also, what are my reporting obligations? By that I mean, is there any extra paperwork I must file, with INS, SS, etc, to ensure everything stays on the good side of the law?
