I gave up about 2 years ago. Now, I price my jobs so that I can re-do them 2-3 times because my help just couldn't find the tiniest piece of common sense and bring it to work with them.
Really, I don't have an answer to your question. Everyone we hire seems to want mucho denaro ( big $$ ) after 2 weeks of work. I feel they have to prove themselves a bit longer than that.

My first thought would be to look within first, and see if anyone has what it might take to do what your manager had.

As far as labor, advertise in a few Mexican grocery stores and in La Razza or any other Spanish news paper, assuming of course that is your target market for labor.
