Here's a pic of how our rock walls look. We plug the joints from the back with mortar, then when the wall gets over 3 ft we use 'no fines concrete' for the drainage layer instead of straight aggregate. No fines concrete is 6 parts aggregate, 1 part cement and 1 part water. This sets like honycombe and allows drainage down to the agricultural pipe at the bottom of the wall.

Here, as a rule of thumb, we want the base of the wall to be 1/2 the height of the wall. We achieve this on higher walls by using the no fines instead of larger rocks.
