Flagstone joints. Mortar or poly sand?

I'll be doing a 15x25 flagstone patio. I've always used sand or fine mulch for the joints. I'm in the St. louis area so I have freezing and thawing. I'm wondering if anyone can help me find a good epoxy type mortar for this project. We haven't decided if we are going to use mortar or poly sand. I'd like to use some type of epoxy mortar for durablity. What are some of the key points with this vs poly sand? This patio will possibly be sealed.

It will be laid on a 1 inch minus base, about 5 inches thick. The stone is about 2-2.5 inches thick. I'm thinking a epoxy type mortar will help the joints from cracking. Although the poly sand will go a lot quicker.
