Do you have a budget in mind yet? This will help determine what to do.
If you are going to buy a top of the line viking with all the bells and whistles, I think its kind of a shame to surround it with a bunch of cheap retaining wall blocks. No pun intended here, but that's the way I see it.
Just google gas grill, and you will find a bazillian sources and ideas. Look through it for a while, and pick out the ones you like. Then you can sit down and start putting a budget together. After you get a budget, you can then start planning. If you aren't going to spend a fortune, then a SRW set up may work fine. If you want to spend more, then think about doing a mortared unit.
Also, I think you are in a warmer client, so you may want to take a look at some of the pre-fab kitchen set ups. They basically ship the whole shabang to you, grill, counter top, sink, fridge, etc....and you just set it up on a level concrete pad of some sort and are ready to cook.
