What does the edger have to do with the concrete restraint?
As far as the concrete goes, if you reinforce it with rebar you should be ok with the depth you are going. We used to use concrete as edge restraint years ago before the plastic edge restraint was available, but always had problem with it cracking and heaving with the frost. The difference was that we were not going near as deep and wide as what you are and it was not reinforced.
I think it is unnecessary, but it should be OK structurally.
