How many is too many?

For all you guys with employees, how many employees is your max?

We are a growing company as I have said before. My partner and I have 3 full timers and 2 part timers right now. We have a watering guy in the watering season as we contract with the city and some commercial companies to do seasonal flowers in containers. So 3 part timers.

We have recently been discussing hiring a full time mason and a full time gardener (might be to replace some of the part timers?) These are 2 expensive positions and are where my partner and I have fit before. However, he is bogged down with design work like we have never seen before and I have become more of the managing partner rather than our company gardener.

So, I am wondering at what point you all feel enough is enough. 2 more is fine but I can see in the horizon the temptation for taking more and More and MORe and MORE!!!!! to make more money and eventually going nutzo.
